If so, then it’s time to take a trip to the alluring town of Eugenia for an eclectic dining experience where everything is made from scratch! The Flying Chestnut’s reputation has grown solely by word of mouth.
A labour of love, the restaurant has been transformed from a post office/general store/workshop to a custom designed bar built from salvaged rafters from the Hanover arena, to walls created from an American clay; the Flying Chestnut was built with sustainability in mind and exudes character at every corner, from its refurbished wood stove to lovely piano. “This is a dream; I built it,” says Adler in a proud tone of voice.
“We’re packed every night,” says owner and Chef, Shawn Adler, and “we’ve only been open for just over a year”.
Adler originally owned two restaurants in Peterborough and moved to Eugenia to open up his whimsical Bistro style restaurant. Together with the charming Michaella who serves, and Adler’s Sous Chef, Jason Hayes, the team manages to create a memorable dining experience. Chef Adler graduated from Stratford Chef School in 1999 and Trent University in 2007. Trent taught him to question everything– from his focus on local and organic ingredients, to his incredibly creative, enticing dishes.
Like everything else, the attention’s in the detail. They purchase their meat whole, and smoke and brine it themselves and even bake their bread and bagels in an old stone stove out back! Don’t forget to take a pound of their homemade sweet curry or paprika butter home.

The Silverhearts, Lily Frost and Fred Eaglesmith are among some great talent that has performed at the Flying Chestnut! Committed to serving their local community, the Flying Chestnut also took part in Foodstock and offers catering services with their kitchen on wheels.
